Vinification:
De-stemmed and pressed grapes, fermented with skins yeasts in steel tanks for 20-25 days.
Ageing: in french barriques for 12 months.
Tasting notes:
Shines of a red ruby colour with scarlet nuances. Complex in its fragrances. Intense floral smell of violet, sour cherry, black cherry and small red fruits.
Then follow "Boero" (a chocolate praline with cherry and liqueur), hot spices, coffee and licorice. Aftertaste of fruits in alcohol,
chocolate and spices. Noteworthy tannin and freshness give to the taste the right equilibrium, soft and embracing. Closes long and balsamic.
Food pairing:
Hare ragout with pappardelle, duck with cherry sauce, beef stew. According to tradition: lamb ragout with cavatelli.
