Area of production: Hills of Pedemonte, municipality of S. Pietro in Cariano in the Valpolicella region.
Variety: Corvina 60%, Rondinella 20%, Corvinoni 20%
Colour: Intense red with garnet reflections.
Bouquet: Aroma of almonds and fresh walnuts.
Flavour: Full-bodied, velvety with an excellent fine structure.
Recommended with: White and roasted meats.
This is an excellently structured red wine with a supple body.
The technique used in making this great wine is typical of the area around Verona. After the Amarone has been drawn off, the marc remains in the
vat and, instead of begin pressed, it is topped up with high quality Valpolicella before being left to re-ferment for approximately 10-15 days.
The wine is aged 12 months firstly in French tonneaux barrels and then another 12 months in toasted, second pass French barriques before being bottled.
