Vinification:
Manual harvesting in boxes of the grapes slightly overripe between the last ten days of September and the beginning of October, followed by a hand selection of the bunches on a sorting
tape, a crushing-destemming, cryomaceration of 4 days, alcoholic fermentation with maceration of the skins in contact for 10-12 days at 20-22°C with selected yeasts. Racking and malolactic
fermentation in steel.
Ageing:
for 8-10 months in French oak barriques of second and third passage, in bottle for 6 months.
Tasting notes:
Intense ruby red color with garnet reflections. Intense and complex nose, hints of ripe red fruits with spicy notes of cinnamon and tobacco, typical notes of the Mediterranean scrub, including sage
and rosemary. Round and robust on the palate, soft and persistent tannins.
